Popina Provi started out as most things do: just an idea. Three friends were sitting laughing over the dinner table discussing various aspects of roman dining when they realized there was a business to be made: one that not only delivers customers genuine roman fare but also allows them to take part in the novelty and character of food served as it was 2000 years ago. Popina Provi was born.
The process of creating the truck itself took time - the refurbishment of the truck itself required a great deal of expenditure and planning. On does not simple take a delivery truck and serve food out of it, rather one is required to strip said truck down and convert it into a mobile kitchen. This demands a great deal of care - one needs to make sure stoves, sinks, refrigerators, and electrical systems all function as one self-contained unit. Additionally, the city of Providence requires that any registered food truck tobe in line with all health and city planning regulations. The paperwork was immense and difficult, as was the set-up process of the actual truck.
Ultimately the finished result is only as good as the product it delivers and our product was food. We took great care to make sure our menu stayed authentic, while still remaining palatable to the average Brown student. We continually look to improve our brand, and are always experimenting with our flavor, menu, and design. Try it for yourself!
